The 18th December 2019 is a milestone at Hirzer 2781. It was from then onwards that award-winning chef Peter Oberrauch – literally – took matters into his own hands: He created the gourmet restaurant “Le Cheval” and in the future will become a stage for extravagant culinary compositions accompanied by exquisite wines.
The central focus of Peter Oberrauch’s cuisine philosophy? The freshness and excellent quality of the original products. He uses them to conjure up unique dishes based on international, French, Mediterranean of South Tyrol culinary traditions. From an early age, Peter Oberrauch was fascinated by the colourful and aromatic world of cooking.
He completed his training as a junior chef in some of the best restaurants domestically and abroad and refined his own culinary personality – with success: Wherever he went, taking over the reins as the Chef de Partie up to Executive Chef, he left behind delicious footprints.
In 2014, 2015 and 2016, Gault & Millau awarded him with 2 toques and 16 points in the international gourmet bible. In 2021 the gourmet restaurant Le Cheval was rewarded with 3 toques and 15.5 points for the first time.
His secret?
“Cook simply and interpret tradition well".
His favourite dish?
Bluefin tuna tartar, with creme fraiche, caviar and grated lime
His motto?
“Cooking is an art… and every art has its little secrets.“
